Lazy dinner

Tonight’s meal: Quiche.
One of my staples is frozen pie crust, organic, of course.
Is the oven empty? Always look. Place at least one rack in the middle of the oven. Set the oven to 350 degrees.
Tear or cut fresh spinach into bite-sized pieces. (Clean it first.) Gently drop a handful into the frozen pie crust. (Watch out for an extra layer of paper between crusts.)
Dice then saute 1/2 of a yellow onion (about the size of your fist) in a dab of butter in a small skillet until translucent. Gently pour the cooked onions into the pie crust on top of the spinach, evenly distributing the veggies.
Using an immersion blender, blend 7-8 eggs, a dollop of roasted red pepper spread until almost frothy. Gently pour the egg mixture over the spinach and onions, leaving 1/8 of an inch to the brim of the crust. With two fingers, dunk the spinach sticking up through the eggs, kinda like you would dunk your little sister in the swimming pool. No malice, just fun. Rinse fingers.
Open the oven door. With two steady hands (and no traffic in the way) place the filled pie crust in the middle of the middle rack. Gently close the oven. Set a timer for 40 minutes.
Take a nap, read a book, put in a load of laundry, go pick up some salad if you’re out.
To test the doneness , poke a clean table knife through the quiche. If it comes out clean, it’s done. If it’s wet, close the oven and wait another 5-10 minutes. Then retest.
Serve with mixed greens. Yum.

I love my immersion blender. I have a Braun but there are other brands out there, too.
