Dominican Feast

On a fluke, both my roommate’s parents and my parents were in town at the same time.

Saturday night, Betsy’s mother made us a Dominican meal of Christians & Moors (rice & beans), roasted eggplant, sour-orange chicken, tomatoes with avocado and salad.

I broke open some bottles of Mendoza merlot and cabernet to celebrate.

The roasted eggplant was a labor-intensive dish that I will detail here later. And the chicken marinated in a mixture I don’t know yet…stay tuned!
