Baked Egg Recipe

An easy, quick brunch item is baked eggs. I like the varieties that Cafe Gitane in Soho makes but here’s my own:
Pan fry one strip of (turkey) bacon. In an oven-proof dish, place 3 eggs, a handful of spinach, 5-9 capers, 1/4t caper juice and crumbled or diced bacon.
Put in the oven on 400 degrees for 20 minutes.
Voila, brunch!
