Summer Salad 1 Recipe

Learn from my mistake: Do not try a new dish when you’re famished.
What I ended up assembling was so yummy, crunchy and fresh, I forgive myself for turning on my rice cooker.

1 endive, cut cross-wise thinly
1/2 head radicchio, sliced thinly
16 precooked shrimp, rinsed
1 red bell pepper, deseeded and sliced thinly
1/3c crumbled blue cheese
2T rice vinegar
1T olive oil (use canola or saffron instead if you have it)

Assembled all ingredients in a large bowl with enough room to toss. Serve with a chilled rose or chilled red wine cut with seltzer (like the Argentinians do). Chew slowly and savor.
