Summer Salad 2 Recipe

Same bowl, different results. This was another love fest with radicchio :)
I was melting in the kitchen. When salad tossing, you don’t want your lettuce to wilt. Fill a glass or ceramic bowl with cold water and add ice cubes as you prep the ingredients.

Mise en place:
radicchio, shred or cut coarsely
pea-size mozzarella balls
black, briny olives
artichoke hearts, roughly cut
moist, sun-dried tomatoes, chopped (reconstitute in hot water if you need to get them chewy)

Empty water and icecubes from the bowl. Add all ingredients to the chilled bowl. Add rice vinegar and olive oil or artichoke oil, using a 2 vinegar:1 oil ratio.
Mix well and eat!

A chilled bowl! That's the secret to a perfectly refreshing salad!
