One Pot Meal: Chicken & Kale Recipe

Between moving and pan-finding and on-site projects in other states, I haven’t cooked much lately. So I’m thrilled to share this super-easy one-pot meal.

3/4 c chicken stock (not broth)
1 boneless chicken breast, rinsed and patted dry
4 leaves of kale, washed and coarsely chopped

Place the broth in a pot and put on medium-high heat. As broth comes to a boil, set the chicken in the pot and cover with a lid. Poach for about 4-6 minutes. Turn the chicken over, replace the lid and poach for another 3-4 minutes (if the breast is thick, poach a 2-3 minutes longer). Add kale on top of chicken and steam for about 4-6 minutes or until kale wilts. Serve with a slice of sourdough bread or a side of wild rice. YUM

At the most, this dish will be on the table in under 20 minutes!
