Simple Winter Soup Recipe

Nothing beats hot soup on a cold day. I scavenged what was in the fridge and made this yummy soup.

3 stalks of celery, chopped
2 medium carrots, chopped
8-14 brussel sprouts
1/2 onion, diced
1/2 c chicken stock
3 c chick broth

Chop the carrots and celery into roughly the same size pieces, about 1/4 inch. Halve the brussel sprouts.
Saute the onion in a thin slice of butter and 1/2 teaspoon olive oil until you can see through the onions. Add the stock and simmer. Add the other vegetables and the broth. Bring to a boil then simmer for 15 minutes. Salt and pepper to taste.
Serve with warm, dark bread.
