3-Bean Summer Salad Recipe

Lila was visibly flummoxed by how easy this 3-bean salad was to assemble. This post is for you, hon.

1.5 tsp wasabi powder
1/4c rice vinegar
4 Tbls shoyu or soy sauce
3 cloves garlic, minced
1 Tbls pickled ginger, minced
1 tsp pickled ginger juice
1 tsp sesame oil
1 bag shelled edemame beans
16oz can red kidney beans, drained and thoroughly rinsed
16oz can black beans, drained and thoroughly rinsed

In a medium bowl mix the wasabi powder with rice vinegar and shoyu until it dissolves. Add the minced garlic and pickled ginger. Add sesame oil and taste. If you like, add more wasabi powder for punch.
Add all 3 beans to the sauce and mix gently. Serve chilled. Rice crackers go well with this.
