Easy Tilapia Recipe

We were invited to Peter’s for dinner and needed a portable dinner fast. I prepped the chutney in advance and grabbed the fish. Jasmine rice and broccoli rounded out the meal.

1 red bell pepper, diced
1 orange bell pepper, diced
5 tangerines, sectioned
7 limes, juiced
1 medium red onion, diced
4 cloves garlic, minced
6 tilapia fillets

Combine all ingredients (except the tilapia) and mix well. Heat oven to 450 degrees. Tear 6 squares of aluminum foil large enough to envelope each piece of fish. Place the raw fish diagonally on the foil. Scoop appx 1/4 cup of chutney onto each piece of fish, including some juice. Close the foil around the fish but leave room inside so the fish can steam. Place the 6 foil packets in a shallow baking dish. Pour some water in the baking dish, just enough to cover the bottom of the pan. Place in the oven and bake for 12 minutes.
While the fish is baking, put the remaining chutney in a saucepan. Bring the chutney to a simmer and cook until the citrus sections get soft.
Serve the fish packets on plates and top with the warmed chutney. The chutney is also good over rice. Yum.
