Turnip Puree Recipe

Yes, we’re still in the throes of root vegetable season. All the better to whip up new ways to eat them. A simple steaming is all it takes to get turnips soft enough to mash. You can add butter, dried herbs, fresh herbs or even dried fruit to mix it up. Get creative.
turnip puree
1/2 pound turnips, diced
water, enough to cover
salt
white pepper

In a 3-quart pot, bring water to a slow boil. Add the turnips. Cook, uncovered until fork-tender. Drain the turnips and save the cooking liquid. Using an immersion blender or food processor, puree the turnips, adding back the cooking liquid until you get the consistency you want. Add salt and white pepper to taste. Serve with other veggies or meat.
